Apple fritters bring back memories from different times in my life and they are all great memories! Family vacations, county fairs in the summer, a little country store near our house that made them homemade and were always fresh and served in a paper bag, to my mom who made them for us as a treat.
Ingredients:
APPLE FRITTERS:
- 1 1/2 cups all-purpose flour
- 1/4 cup sugar
- 2 tbsp. baking powder
- 1/2 tsp. salt
- 1 1/2 tsp. cinnamon
- 1/3 cup milk
- 2 eggs
- 3 tablespoons applesauce
- 2 large Granny Smith or Honey Crisp apples, peeled, cored and diced
- Canola oil for frying
- ICING:
- 2 cups icing sugar
- 1/4 cup milk
- 1/2 teaspoon of vanilla
PREPARATION:
Preheat your oven to 350°F (175°C) and lightly grease a baking sheet.
Mix flour, granulated and brown sugars, baking powder, cinnamon, and salt in a large bowl.
In another bowl, whisk together milk, eggs, melted butter, and vanilla.
Fold wet ingredients into dry, mixing until just combined. Stir in diced apples.
Drop batter by 1/4 cupfuls onto the prepared baking sheet, spacing them out.
Bake for 15-20 minutes, until golden and set. Cool in the pan for 5 minutes, then transfer to a wire rack.
Dust with powdered sugar before serving, if desired.
